  • Roasted Fulton Valley Half-Chicken served with celery root/potato puree, Chardonnay-braised fennel, and lemon-garlic-oregano jus
  • Filet of Pacific Canadian Salmon filled with spinach and pine nuts, served with creamed leeks and potato coins
  • Acorn squash stuffed with curried quinoa, golden raisins & sage, served with melted Swiss chard and toasted almond "jus"
